Mozzarella Tomato Basil salad

Well, well, did,we have a great dinner!  We have beenon quest to eat better.  (really to lose weight).  and to Lower my blood sugar and cholesterol.  We had some fresh tomatoes from Mr. Abbott and sme fresh mozzarella cheese from Trader Joes and some fresh Basil from our own basil plant (also from Trader Joes).   Sliced I up n a plate, added Olive oil and salt and pepper.  Soo good!  Losing weight right now!!!

Trader Joes

We have been going to Trader Joes every Sat for about 6months.  It is the coolest store.  I'm not  sure what determines what they sell but they sell food.  It is suppose to be healthy but we end up with lots of Carbs. We also buy Greek yogurt, lettuce, whole wheat bread, steel cut oatmeal, joe joes (cookies) , peanut butter, cukes and cheese.  It is Kindof like Whole Foods but cooler.  We wouldn't go to whole foods but love the Traders.  We like to try something new each week.  Last week was frozen grilled zucchini and eggplant.  We decided we wouldn't try that again.  This week we tried enchilada sauce.   We have also tried almond butter (soo yummy), salsa, cilantro salad dressing, cheddar jack cheese  and they are all keepers!  And Inner Peas we have tried recently. Not sure if they are good or not, but they were sold out last week so had to get two bags this week!  If everyone  else wants them, soo do we!  They are baked pea pods.  They Kindof taste like styrafoam with a bit of pod taste.  And they sort of dissolve.  If anything they are super different and all the skinny people were buying them!!!

Fireworks 2013

We went to the annual July 3 fireworks in South Salt Lake at Granite High School.  We have been going for a while with the Peart Family.  It is super hot and super fun.  Each year I think it is going to be the last year because they are tearning down or selling granite high school.  But We got another  year.

I haven't baked in a while.  Mostly because my mixer died and I would rather just cut some cookie dough from the fridge and bake it up.  Just as good as homemake and much easier.  BUT I saw this recipie for peanut butter filled cookies.  So I HAD to try it.  They were delicious.  Really.  I think we have to try them again.  The recipe is here....

Baseball Season

 

spring is here which means its Baseball season!  Nick, Jack, and Andrew are all playing ball.  love it.  Jack is quite the ball player.  Nick loves to play Catcher!  Andrew plays second base, right field and 3rd base.

Tuachan 2013

Oh our annual trip to St George and Tuachan was a success!  Michelle, Marlena and Maureen went to see Mary Poppins and Starlight express.  They were both excellent! I almost liked starlight express better because it was soo entertaining with them on rollerskates.  We stayed at the Crystall Inn thanks to Martis IHC discount.  good breakfast and nice pool.  We ate, slept, shopped, got a pedicure and went to the theater.  What could have been a better trip?  Oh only thing that could make it betters that my mom paid for the tickets, gas, hotel and pedicures!  and the highlight was going to swigs that served dirty diet cokes (diet. One with coconut in it-I don't like coconut so I did t get one) AND the best sugar cookies that they frost as you wait!  Love getting a fab diet coke AND a cookie AND at a drive through!  Can't wait for next season!

Partying with the boys

Brooke and Abi have gome to girls camp.  I didn't hae to teach summer school so the boys and I Partied.  first we went to Cabellas and looked around.  They have a huge fish tank and cool displays of wildlife just like in a natural history museum.  They also have some fish to feed and a shooting range.  We bought some hats and some candy of course..

We went to lunch at Chik -fil-A.  Love us some chicken.

Then we went to Trafalga and rode some rides ...okay just that waer one (line took forever and it was hot) and did some mini golf in the black lite golf course.  It was pretty fun but sure hot.  We decided to leave to get home to golf again on the real golf course.  It was fun except Jack likes to come after people with his golf clubs.  The guy gave all of us the 2.00 coupon rate when I only had one coupon.  We had to have a slurpee after all of that.  I was soo tired and hot when we were finished.  LOVE spending time with the boys!  (I also had the lowest score in the golf too!!)
